Mastering the Art of Charcuterie: A Guide to Creating a Stunning Board for Picnics, Parties, and Motorcycle Adventures

The Story behind the Recipe

A few years ago my partner and I are took a thrilling motorcycle ride to the awe inspiring Red Rock Canyon, where we indulged in a romantic picnic surrounded by breathtaking views.

The journey from Las Vegas to the canyon was a scenic 35 to 40 minutes, and every second was worth it. The views out there were simply out of this world, and I couldn't resist capturing those awe-inspiring moments through my camera lens. And what did we bring with us? A romantic picnic of course!

Now, let's talk about the picnic - essentially a charcuterie board, so simple and elegant, that you can easily impress your love with too.

A charcuterie board is a display of various cured meats, cheeses, condiments, fruits, nuts, and bread or crackers, typically arranged on a wooden board or platter. The term "charcuterie" itself refers to the art of preparing and preserving meats through techniques such as curing, smoking, and fermenting. This preserving method was developed in France, before the invention of refrigeration. The practice of charcuterie spread throughout Europe, and today it has become a popular culinary trend around the world. It’s no wonder, since it’s such an easy way to create a visually impressive centerpiece for a party or romantic evening.

Selecting your Cheeses

When it comes to selecting the perfect cheeses for your charcuterie board, it's all about creating a harmonious balance of flavors and textures. Start by considering a variety of cheeses to cater to different palates. Choose options with varying intensities, such as a mild and creamy cheese like brie, a sharp and aged cheddar, and perhaps a tangy and crumbly blue cheese.

Experiment with different types, including soft, semi-soft, and hard cheeses, to offer a diverse tasting experience. Additionally, consider the origins and styles of the cheeses—exploring options from different regions and showcasing a mix of styles like cow's milk, goat's milk, or sheep's milk. By curating a thoughtful selection, you'll ensure that there's a cheese for everyone's preferences and create an unforgettable experience for all.

Select a variety of cheeses for every palate. Here’s how I remember it: Hard, semi-soft and soft. Mild, Sharp, and Funky.

For our picnic, I curated a selection of sensational cheeses and wines from our tour through Napa Valley in California. Then, to elevate the flavors, I whipped up some extraordinary dipping sauces. Crafting these flavor-packed dips was a breeze!

Making your own dipping sauces.

When it comes to creating simple and flavorful olive oil-based dipping sauces, a variety of spices can elevate the taste and add a delightful twist. Mix your favorite spices with some good quality olive oil, and you're done!

Here's a list of spices that work well and are easy to find at your local grocery store:

  1. Garlic powder or minced garlic: Adds a savory and aromatic element.

  2. Red pepper flakes: Provides a hint of spiciness and heat.

  3. Italian seasoning: A blend of herbs like basil, oregano, rosemary, and thyme for a Mediterranean touch.

  4. Smoked paprika: Adds a smoky and slightly sweet flavor.

  5. Dried parsley: Brings a fresh and herbaceous taste.

  6. Crushed black pepper: Offers a subtle kick of spiciness.

  7. Dried dill: Adds a refreshing and tangy flavor.

  8. Lemon zest: Provides a citrusy and bright note.

  9. Chili powder: Adds a warm and smoky flavor with a touch of heat.

  10. Colorful sea salts: Adds elegance and enhances the other flavors you’ve chosen.

These spices can be combined according to your personal preferences. Don't be afraid to experiment and adjust the quantities to achieve your desired taste.


For our sauces, I had gathered spices from different corners of the country, including Cyprus black sea salt and Icelandic Birch smoked sea salt, which I discovered in a charming little shop in Maine, called Salt Cellar. And let's not forget the dried jalapeno peppers, a fiery gem I stumbled upon at a local farmer's market in Arizona.

To make the dipping oil, I selected a California extra virgin olive oil and added in the different spices, including French thyme, Mediterranean oregano, and Mediterranean paprika from Maggie’s Pharm, a cute little health and wellness in Memphis, Tennessee.

Selecting Meats for your Charcuterie Board

When it comes to selecting meats for a charcuterie board, variety and quality are key. Aim for a combination of flavors, textures, and types of cured meats to create a diverse and delicious spread. For our “on the road” version of a charcuterie board we kept it simple with a couple choices of salami. Here are several other options to consider:

  1. Prosciutto: A delicate and thinly sliced Italian dry-cured ham with a buttery texture.

  2. Salami: A classic choice, available in various styles such as Genoa, soppressata, or finocchiona, offering a range of flavors from mild to spicy.

  3. Chorizo: A Spanish cured sausage known for its robust and smoky flavor, available in both spicy and mild varieties.

  4. Coppa: A marbled and tender Italian cured pork shoulder, often seasoned with herbs and spices.

  5. Bresaola: Air-dried, salted beef with a deep red color and a rich, slightly tangy flavor.

  6. Pancetta: An Italian bacon made from pork belly that is cured and often seasoned with herbs and spices.

  7. Mortadella: A large Italian sausage made from finely ground pork, known for its smooth texture and subtle flavors.

  8. Capicola: A spiced and dry-cured Italian cold cut made from pork shoulder or neck, typically with a hint of heat.

Once we had all of our ingredients prepped and the charcuterie board arranged for our Valentine's Day picnic, we poured our chilled wine into stylish plastic wine glasses, sat back and enjoyed remarkable beauty of Red Rock Canyon.

Ingredients:

  • Assorted cured meats (such as prosciutto, salami, and chorizo)

  • A variety of cheeses (such as cheddar, brie, and manchego)

  • Assorted crackers and breads (such as water crackers, baguette, and crostini)

  • Fresh fruits (such as grapes, apples, and berries)

  • Nuts (such as almonds and cashews)

  • Olives

  • Dips or spreads (such as hummus, mustard, or olive oil dips)

  • Optional: dried fruits or preserves

Instructions:

  1. Choose a large serving platter or decorative cutting board to arrange your charcuterie on.

  2. Begin by arranging your cured meats on the board, folding or rolling them for a more visually appealing presentation.

  3. Cut your cheeses into bite-sized pieces and arrange them on the board next to the meats.

  4. Add your crackers and breads to the board, placing them in between the meats and cheeses.

  5. Slice any fresh fruits you are using and arrange them in small clusters around the board.

  6. Add your nuts and olives to the board, placing them in small bowls or scattered around the board.

  7. If using dips or spreads, add them to small bowls and place them on the board in between the other ingredients.

  8. Optional: Add some dried fruits to the board for added variety and texture.

  9. Invite your friends, open a bottle of wine, and enjoy!

Tips:

  • Play with colors and textures when arranging your charcuterie board to make it visually appealing.

  • Choose a variety of flavors for your meats, cheeses, and dips to ensure there is something for everyone to enjoy.

  • Don't overcrowd the board – leave enough space between ingredients for easy access.

  • Use small serving utensils for the dips and spreads to make it easy for guests to serve themselves.

Our Picnic Version - Easy Charcuterie on the Road

Ingredients:

  • 3 different types of cheese

  • 2 different types of cured meat

  • 1 bottle of California wine (Riesling, Chardonnay, or Pinot Noir work well)

  • 1 baguette or crackers

  • 1/2 cup of good quality olive oil

  • 1 tsp of Cyprus black sea salt

  • 1 tsp of Icelandic Birch smoked sea salt

  • 1 tsp of dried jalapeno peppers

  • 1 tsp of Mediterranean oregano

  • 1 tsp of dried cilantro

  • 1 tsp of French thyme

  • 1 tsp of Mediterranean paprika

  • 1 tsp of seasoning salt (Trader Joe's or similar)



Instructions:

  1. Begin by preparing the dipping oil. In a small bowl or jar, combine the olive oil with your preferred spices. Mix well to combine. [Suggestions: 1. Mediterranean Oregano and Cyprus Black Sea Salt. 2. Paprika and French Thyme. 3. Icelandic Birch Smoked Sea Salt, dried Jalapeño Flakes, and Black Pepper.]

  2. Arrange the cheese and cured meat on a large serving board or platter.

  3. Pour the dipping oil into a small dipping dish and place it on the board.

  4. Add a baguette or crackers to the board.

  5. Open the bottle of your favorite wine and pour it into glasses.

  6. Serve and enjoy your picnic charcuterie board!
